Chicken Fajitas Tacos With Bacon, Avo and Sour Cream

As you probably may have noticed, I mostly share vegetarian and vegan recipes — I try to follow a plant-based diet most days of the week. But honestly, sometimes all I can think about is a good old meaty dish. This time, to satisfy my cravings, I have prepared a “double meat” dish. Although it contains two types of meat - chicken breast and bacon - it is relatively light and one might even call it healthy. However, even if you leave the bacon out of it, the sour cream is a must, it gives the soul to the food. I hope I can bring some joy for my fellow meat eaters and that you will give this quick and easy recipe a try.

Ingredients

  • 1 yellow bell pepper, sliced into strips
  • 1 green bell pepper, sliced into strips
  • 1 red bell pepper, sliced into strips
  • 500 g chicken breast, cut into stripes
  • salt and pepper
  • 1 tsp. smoked paprika
  • 1 tsp. chili flakes
  • 1 tsp. ground cumin seeds
  • 2-3 Tbsp. olive oil
  • 4 sliced of bacon
  • 4 taco/tortilla sheets
  • 150 g of sour cream
  • 1 glove of garlic, smashed
  • 1 avocado, smashed
  • juice of 1/2 lemon
  • couple of cherry tomatoes
Instructions

Arrange the bell peppers and chicken on a sheet pan. Season with salt and pepper, smoked paprika, chili flakes, ground cumin seeds. Drizzle the olive oil all over, bake at 200C for 30 minutes.
Meanwhile, add the bacon slices into a preheated pan and bake until crispy on both sides. Using the same pan, toast the taco/tortilla sheets fir a couple of minutes on both sides to warm them up.
Meanwhile, for the sour cream sauce mix together the sour cram with some salt and the smashed garlic. For the avo sauce mic together the smashed avocado with some salt, pepper and the juice of 1/2 lemon.
Build your tacos to your liking.
