Minimal hands-on involvement and perfect to make the night before, ready for breakfast!
I never make an effort for breakfast in the week. I start work very early and getting the kids ready to go out to childcare in time is a mission. We have just 20 minutes to get them dressed and ready. If I put breakfast in the mix it would mean waking everyone up even earlier. But in the weekends I sometimes make something nice, whether that is pancakes or a baked good. One of my favourites that I make on a regular basis is brioche. It isn’t the healthiest option out there, but it just makes everyone so excited to wake up and start the day! If you make this tonight it will be perfect to enjoy tomorrow at breakfast and still be nice for Sunday too!
Soft Yogurt Brioche Bread

Ingredients
- 1/2 cup warm milk
- 14 g (2 sachets) dried yeast
- 1/2 cup plain yogurt
- 1/2 cup sugar
- 1/2 cup sunflower oil
- 1 egg
- 1 tsp vanilla essence
- 1/2 lemon zest
- 3 3/4 cups white bread flour
- Icing sugar (optional)
Instructions
- Warm up the milk in a bowl in the microwave. Stir in the yeast and continue mixing until completely dissolved.Mix in the plain yogurt, the sugar, sunflower oil, egg, vanilla essence and lemon zest.
- Add the flour bit by bit, whilst continue mixing. When all the flour has been mixed in, capsize the dough on a worktop. Knead it until it comes together into a smooth ball and it’s not sticky.
- Place it into a bowl and cover with cling film. Leave it to prove for a couple of hours, till doubled in size.
- Oil a round cake tin and divide the dough into 7 pieces, approx. 5oz each. Shape them into balls and place in the cake tin in a circle. Cover with cling film or a tea towel and leave to prove for 30 minutes, whilst pre-heating the oven in static mode (not fan) at 350°F.
- Uncover and bake for 35-40 minutes, until it looks golden.Leave to cool completely on a rack and dust some icing sugar on top (optional).
- Tear a portion out and enjoy like that or with some jam or other spread!
Tips
- If you are eating it the next day wrap a tea towel around it and it will keep it soft

Can I use pure vanilla extract?
I usually substitute apple sauce for oil in my recipes. Can I do that for this recipe?
