Blueberry Zucchini Banana Bread

Ever had those days where you have a whole bunch of things that just need to get used up at once? That is how this bread recipe came to be! Bananas were brown, zucchini was going soft, and blueberries were starting to shrivel and I decided to combine them all into one delicious dessert!
I have made this so many times since - my husband and daughter love it.. almost as much as they love the banana blueberry oatmeal muffins!
These flavors work really well together; nothing is overpowering and you are left with a sweet, extremely moist loaf cake that goes really well with coffee!
pretty much eat this straight out of the pan as-is every time I walk past it on the kitchen counter. Since I work from my kitchen this happens more than I care to admit... but I can't help it! It is a must-try recipe!
Blueberry Zucchini Banana Bread

Ingredients
- 2 1/4 cups all purpose flour
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/2 cup butter, melted
- 1 cup firmly packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 medium bananas (about 1 cup mashed banana)
- 1 small zucchini, shredded (about 1 cup shredded zucchini)
- 1 cup blueberries
Instructions
- preheat oven to 350 F, grease a 9x5 loaf pan and set aside
- in a large bowl, stir together the flour, baking powder, cinnamon, ginger, baking soda, salt, and nutmeg and set aside
- in a smaller bowl, whisk together the butter and brown sugar until smooth, then add the eggs and vanilla and whisk again until uniform
- add the bananas and use a whisk or a fork to break them up while mixing them into the batter
- add the butter mixture to the flour mixture and stir until just combined, then fold in the zucchini and blueberries until evenly dispersed throughout
- bake in preheated oven for 60-70 minutes, or until golden brown and a toothpick inserted into the center comes out clean
- allow to cool in pan for at least 10 minutes before flipping out onto a wire rack to finish cooling
- slice and enjoy!
