Zucchini Banana Bread

This recipe is an adaption from my banana bread recipe. This time of year we have so much zucchini in our garden. I try to come up with new ways to use it. This bread turned out so moist and flavorful. I got a thumbs up from the family on it so I knew it had to be good.

Look how moist it looks. I put a little homemade butter on it and oh my, heavenly!

I adapted my recipe using 3/4 cup each of bananas and zucchini. I used my food processor to do this and it worked perfect. But you could definitely hand grate your zucchini and mash your bananas by hand.

I don't always use my mixer. This recipe you can easily mix by hand with a spoon. Cream your butter sugar and egg together.

Then just add all of your other ingredients combining together after each one. Mixing it all together was really easy with a spoon. This recipe works just as well if you use a mixer too. You can use this recipe to make muffins, mini muffins, bread or mini loaves as I did. Just adjust your baking time accordingly.

Ingredients
For the recipe
  • 3/4 C Butter
  • 1 C Sugar
  • 1 Egg
  • 3/4 C Grated Zucchini
  • 3/4 C Mashed Bananas
  • 2 C Flour
  • 1 T Vanilla
  • 1 t Cinnamon
  • 11/2 t Baking soda Dissolved in 1/2 C Warm Water
Instructions
To make the loaves
Heat the oven to 350 degrees.
Cream your butter and sugar together
Add your egg, banana, zucchini and vanilla stir until completely mixed in.
Sift your flour and cinnamon
Add flour and cinnamon to the creamed mixture.
Blend well.
Add your dissolved baking soda in warm water and mix until combined. Do not over mix.
Spray your pans with non stick spray.
Add batter to each pan until 3/4 of the way full.
Bake until a toothpick comes out clean in the center, approximately 30 minutes for three mini loaves.
Tips
  • Do not over mix, This is a muffin type mixture.
