Banana and Chocolate Chip Loaf

Are there over-ripe bananas in your pantry? Turn them into this simple and healthy gluten-free banana loaf. The riper the bananas are, the better. This recipe includes less than 15 minutes of preparation time. It is so easy to whip up and requires very little equipment. All you need is a large mixing bowl and a loaf tin. It is delicious on its own, but I also enjoy pairing it with some fresh cream if I feel a little indulgent. This loaf is moist from the addition of coconut oil which also lends a delicious and distinct flavour. It's perfect for breakfast or a snack.

Ingredients

  • 2 bananas 
  • 2 eggs
  • 1/3 cup maple syrup 
  • 1/4 cup coconut oil
  • 1 1/2 cup almond flour
  • 1 teaspoon baking powder 
  • 1 teaspoon vanilla extract 
  • 1/3 cup choc chips
Instructions

Preheat oven to 180C and prepare a loaf tin (approximately 8 by 4 inches) lined with parchment paper. 
In a large bowl, mash ripe bananas with a fork or whisk.
Add eggs and whisk together. 
Add vanilla extract, maple syrup and coconut oil and whisk until combined. 
Add almond flour and baking powder. Fold in using a silicone spatula.
Add chocolate chips and stir well until combined. 
Bake in oven for 45 minutes, or until a skewer comes out clean.
