The Benefits of Eating Beets

If you’re a lover of beets, then you may already know what a nutritional powerhouse they are.

If not, then do know that beets are packed full of antioxidants, including betalains (which gives red beets their bold color and helps reduce inflammation), folate (vitamin B9), and nitrates (which turns into nitric oxide, a natural blood pressure reducer).

So if you’re trying to include more beets in your diet, but don’t love eating roasted beets, then consider this smoothie for an easy way to implement this powerhouse food.

Growing and Preserving Beets at Home

The beets I used for this particular smoothie were frozen. You can purchase frozen beets from the store or grab some of your own frozen beets from the freezer. Here are some helpful articles all about growing, roasting, and freezing beets:

Freezing beets is one of the easiest ways to store them for long term, and they can just be defrosted for use in salads, or used frozen in delicious smoothies like this one.

Blueberry Beet Smoothie Ingredients

Here’s what you’ll need to make this delicious blueberry beet smoothie at home: (Links are for ingredients from Thrive Market, which is an excellent resource for good quality organic and non-GMO products delivered right to your door! Use this link and get 25% off your first order!)

  • 1/2 cup frozen beets (golden or red)
  • 1/2 cup frozen or fresh pineapple
  • 1/4 cup frozen or fresh blueberries
  • 1 cup almond or other milk
  • 1 Tbsp honey (we like to use raw honey)
  • 1 cup ice
  • Splash of vanilla extract (or make your own extract. So easy!)
  • Handful of spinach (optional)
Beet smoothie ingredients ready to go!

I initially tried this recipe with half a banana instead of the frozen pineapple, but it didn’t quite sweeten the smoothie up enough for me. You could certainly substitute in banana for the pineapple, but if you do that, I’d increase the honey slightly to 1 1/2 to 2 tablespoons.

  2. Place frozen beets, pineapple, and blueberries in the blender.
  3. Add milk, ice, splash of vanilla, and a handful of spinach if you’re using.

4. Blend well until all vegetables, fruits, and ice are no longer individually visible.

5. Drink straight out of your smoothie cup or pour into a large glass. Enjoy!
