Pumpkin Spice Shaken Espresso

This coffee is like a brown sugar shaken espresso, but add a little bit of *spice*. I am loving all of these pumpkin recipes that I have been seeing all over my news feed! One of the best times of the year, especially at Starbucks! But personally, it’s just not realistic in my budget to go to Starbucks everyday but I still get that craving. And why doesn’t Starbucks have a pumpkin spice shaken espresso yet?? I wouldn’t be surprised if that comes out on next years fall menu, but in the meantime I had to make my own at home!

Ingredients
For the pumpkin spice syrup:
  • 1 cup water
  • 1 cup brown sugar 
  • 1/2 cup pumpkin purée 
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • Pinch of nutmeg, ginger, and cloves 
For the shaken espresso:
  • 2 Tbsp pumpkin spice syrup
  • 1/3 cup ice
  • 1/2 cup Starbucks espresso
  • 1/2 cup oat milk
Instructions
For the shaken espresso:
To make the shaken espresso, add about 2-3 Tbsp of the pumpkin spice syrup to a glass along with espresso.
Shake until foamy.
Pour over ice.
Top with oat milk.
For the pumpkin spice syrup:
To make the pumpkin spice syrup, in a saucepan over medium heat bring water to a boil.
Then stir in the brown sugar, pumpkin purée, vanilla extract, cinnamon, nutmeg, ginger, and cloves.
Lower heat and simmer until sugar is completely dissolved.
Let cool and pour into a jar.
Store in the fridge.
