Moscow mules are a wonderful choice for a refreshing summertime beverage. Today we share a great variation to the traditional mule cocktail. This version is infused with honey and ginger and elevated with a splash of bubbly. This honey ginger champagne mule is a super fun drink to make and to enjoy on a hot summer day.

I found this recipe in the beautiful little book “Bubbly”. I love drinking bubbles so this book is right up my alley with so many creative recipes. It’s a super pretty book with it’s bubble gold cover, and it makes a wonderful gift for any bubble loving soul like myself. This honey ginger champagne mule cocktail caught my eye from the beautiful presentation to all the fabulous flavors.

A couple of weeks ago I shared this {bee theme tablescape}, and from this styling stemmed a few bee honeycomb projects. I shared the {burlap container DIY bee honeycomb themed} last week. Today we raise our glasses to the busy bee, and all her honeycomb goodness.

honey ginger champagne mule recipe

This is a two step process recipe since you will need to make your honey ginger syrup first. Although it will require a bit of preparation in that regard it’s worth the extra step. The following recipe yields one cocktail.

Ingredients

⚜️1 oz vodka

⚜️3/4 oz ginger honey simple syrup

⚜️1/2 oz lime juice

⚜️3 oz chilled champagne | sparkling wine

⚜️honeycomb garnish

Directions

⚜️Combine Vodka, ginger honey syrup, and lime juice in a cocktail shaker with ice. Shake vigorously to fully mix and chill.

⚜️Pour mixture into copper mug or desired drinking vessel.

⚜️Top with chilled champagne | sparkling wine.

⚜️Garnish with honeycomb.

⚜️Drink & enjoy. Salud!

Ginger honey simple syrup recipe

⚜️Combine 3/4 cup honey, 3/4 cup of water, and 1 large knot of ginger {about 6″ long, peeled & thinly sliced} in a saucepan. Bring to a boil stirring frequently and then let simmer for 5 minutes.

⚜️Remove from heat and let cool to room temperature. Refrigerate mixture over night or at least for 8 hours.

⚜️Strain mixture through sieve and discard solids {I used some of the slices of steeped ginger with the honeycomb as garnish}. Use the desired amount of syrup for cocktails and refrigerate the rest.

⚜️Note the simple syrup will last in the refrigerator for 2 weeks. Whatever you do not use for cocktails can be drizzled over ice cream or over seltzer for a superior ginger ale and belly soother.

I have one more bee honeycomb project coming your way. This is a super easy appetizer, which will wow your family and friends.

Moscow mule mugs

Although the traditional Moscow Mule cocktail is served in a copper mug don’t let that stop you from enjoying this super refreshing beverage. Any tumbler can be used, and there are also some stainless steel mugs out in the marketplace as well, which are pretty cool {no pun intended}.

The copper mug began historically and traditionally as the option of choice for the Moscow Mule recipe. Copper mugs are preferred because copper conducts temperature, and maintains the beverage’s chill. It seems to help the effervescence factor as well.

We found our copper mugs last year while thrifting, which you can read about here {why you should always thrift shop while on the road}. I love how the copper lends itself to this cocktail, and the condensation immediately cools me down.

Enjoy! Cheers! Salud! Sante!
