I've made up my mind: Bubbly cocktails are the best kind of cocktails. In the summer, I'm an Aperol Spritz addict! There's nothing like sitting on the patio on a hot summer day with a refreshing Aperol Spritz! So, I used my favorite Prosecco to come up with a fall version that's a little warmer and spicier: this Ginger Pearsecco Spritz! Start by rimming a coupe glass (why not be fancy?) with a cinnamon sugar rim. Then pour in equal parts pear juice (or nectar), ginger beer and Prosecco. Add a fresh pear slice for garnish, or my favorite, a piece of candied ginger. You can do this!

Ingredients

  • Cinnamon sugar mixture for rimming glasses
  • Candied ginger for garnish (Trader Joe's makes a great one)
  • 2 oz pear juice or nectar
  • 2 oz Prosecco
  • 2 oz ginger beer
Instructions

Rim a coupe glass by dipping in water, then dipping in cinnamon sugar.
Pour in equal parts pear juice (or nectar), ginger beer and Prosecco. For one cocktail, that's 2 oz each. Or you can batch this cocktail by making a pitcher full!
Add a fresh pear slice for garnish, or my favorite, a piece of candied ginger.
