Looking for the perfect make ahead breakfast?

These tasty little Bacon Cheddar Egg bites are a great breakfast option for those busy mornings that you just don’t have the time to cook. Eat them on their own, or with a slice of toast. They are easy to pack in a lunch or even eat on the go as you are heading out the door!

I like to make a batch of these on Sunday's and then again in the middle of the week sometimes. They are a nice alternative from hard boiled eggs and I love that I can change up the fillings for a completely different taste.

Make these and you will no longer have any excuses to skip breakfast again!

To make these tasty Bacon Cheddar Egg Bites begin by greasing a muffin tin with butter. You want to be sure to liberally coat each muffin cup to prevent the eggs from sticking. I prefer to use butter over cooking spray because I find it gives a much better flavor.

Next up you want to prepare the egg mixture. Whisk together eggs, milk, dried chives and salt & pepper to taste.

Crumble up the cooked bacon and place it at the bottom of each muffin cup. I like to use roughly 1/2 of a bacon strip per muffin cup.

If you are not a fan of bacon you can substitute for pretty much any toppings you like. Cubed ham, spinach, peppers, onions all make great fillings for these egg bites!

Fill the muffin cups up about 3/4 of the way full with the egg mixture.

Top with shredded cheddar cheese.

Bake in the oven for 15-20 minutes or until the eggs are firm and slightly golden brown around the edges.

Let the eggs cool slightly before removing them from the pan.

These make a great protein packed snack for little ones, or an easy make ahead breakfast option! My whole family enjoys these and they usually don’t last long.

Ingredients

  • - 6 EGGS
  • - 3 TBSP MILK
  • - 1 TSP DRIED CHIVES 
  • - 1/2 CUP SHREDDED CHEDDAR CHEESE
  • - 6 STRIPS COOKED BACON
  • - SALT AND PEPPER TO TASTE 
Instructions

1. PREHEAT OVEN TO 350
2. GREASE A MUFFIN TIN WITH BUTTER
3. WHISK TOGETHER EGGS, MILK, CHIVES AND S+P
4. CRUMBLE UP THE BACON STRIPS, AND PLACE ROUGHLY HALF OF EACH STRIP AT THE BOTTOM OF EACH MUFFIN CUP
5. POUR THE EGG MIXTURE INTO EACH MUFFIN CUP ABOUT 3/4 FULL
6. SPRINKLE ON THE SHREDDED CHEESE
7. BAKE FOR 15-20 MINUTES 
8. LET COOL AND ENJOY!
Tips
  • Store in an airtight container in the fridge for up to four days.
  • Eat them cold or warm up in the microwave for a few seconds.
