Veggie Burger on a Lettuce Bun - 5 Point on WW
This is my new favorite lunch these days! It's only 5 points on WW (2 if you don't use dressing). Its essentially an inverted buffalo chicken salad meets wedge salad, vegetarian style. Not only is it a great meal but its also fast!
I start off by cutting a wedge off of iceberg lettuce and rising then patting dry.
These are the veggie burgers I got at Trader Joes and they are very good but any veggie burger (or any burger in general) would work.
I take a piece of the wedge out and fill it with cucumbers and onion.
Then top it with blue cheese dressing (Ken's is the best!).
I stick the veggie burger in the toaster oven for 5 minutes and then place on top of the wedge and add a few drops of Frank's red hot, I put that sh** on everything!
Then I close it up again and YUM! This is such a summer lunch for me, crispy, satisfying and healthy. Obviously you can go with different dressing or none at all to make it even more healthy but this is close enough for me :)

Ingredients
- iceburge lettuce
- veggie burger
- blue cheese dressing
- onion
- cucumber
- hot sauce
Instructions
- cut a chunk from a ball of iceberg lettuce
- take out a few leaves and stuff with cucumbers, onion and dressing
- cook veggie burger in toaster oven
- place on top of lettuce bun and add hot sauce
- close with the lid and enjoy!
