Irish Apple Cake

Ingredients
For the Cake
- 1/2 cup unsalted butter at room temperature
- 1/2 cup sugar
- 2 large eggs
- 1 1/4 cups all-purpose flour
- 3 Tbsp buttermilk
- 1 tsp baking powder
- 1 tsp cinnamon
- 3/4 tsp apple pie spice
- 1/8 tsp salt
- 3 Granny Smith apples, peeled and thinly sliced
For the Topping
- 3/4 cup flour
- 1/4 cup fashioned rolled oats
- 6 Tbsp unsalted cold butter
- 1/2 cup sugar
- 1/4 tsp cinnamon
Instructions
For the Topping
- Mix these ingredients in a food processor.
- Transfer to the refrigerator.
For the cake
- Preheat oven to 350F.
- In a large bowl, mix the butter and sugar. Once combined, add eggs in one at a time and mix until fluffy.
- Mix in the remaining ingredients (minus apples) and pour into a 9inch pan.
- Add the apples on top of the batter.
- Sprinkle topping over the apples.
- Bake for 50 minutes
