I love tzatziki! You will see it feature as a side in a lot of my recipes. I almost always have some in the fridge, ready to be added to a salad plate or a sandwich. It's healthy too, but most importantly it's delicious!It is essentially a cucumber and yoghurt dip, originally hailing from Greece. i sometimes also make Turkish Cacik, which is very similar but also includes dill in the mixture. I sometime also add a bit of fresh mint or chives if I happen to have some in the fridge.It's great with kebabs, toasted pita bread, crisps and for dipping in veg. I found Chanterelle Mushrooms in the supermarket the other day. This is quite unusual because all I am able to find is white and portobello mushrooms, so you can imagine my surprise when I came across these in the produce section. So, this pizza is not really made with dough batter but with one wholewheat pita bread. I marinated the pita bread on both sides in lemon juice and olive oil for 10 minutes and topped it with the marinated mushrooms. This pita bread was quite large so it was enough for two people. There are various sizes of pita bread in the market from small to large so adapt the ingredients to the size of the pita bread. If you’re fasting, vegetarian or vegan then you will love this roasted Chanterelle Mushroom recipe. For the fans of Mushrooms like me well this recipe is simply delicious!! M&M Granola Bars

We are only a few weeks away from moving. So this past weekend, I took on the challenge of beginning to clean out our freezer and kitchen cabinets. As I was going through our freezer, I found up to 10 fun sized packs of M&Ms my daughter, Charlie, had gotten for her birthday. M&Ms ("Meemees" as she likes to call them) are her favorite!! But there is no way she will eat (be allowed to eat) all of those M&Ms by the time we move so I had to come up with something to do with them. That’s when I got the idea to make some fun granola bars out of them. These granola bars aren’t too sweet and are a semi healthy treat for her to enjoy.They are only a few ingredients and super simple to make. I added coconut just because I have some I need to get rid of, but you definitely can leave it out if you are not a coconut fan.I cut them into 16 bars, making them a perfectly portioned (145 calorie per bar) snack. I hope you and your kids can have some fun in the kitchen making these soon. They are both kid and adult approved!

Before you know you are going to be seeing loads of fresh husked corn in your local grocery stores. As we turn our thoughts and cravings to Spring and Summer food fare, corn is definitely on the top of my list.I happen to be one of those people that loves the sweet taste and crisp bite of fresh corn but I hate getting it stuck in may teeth. I am always the one at the dinner table with the knife taking my corn off the cob. So any recipe I can make with corn off the cob is my jam! I made this roasted salsa one night and it has become one of the favorite summer sides at barbecues and family weeknight dinners alike. This is a great side for a picnic or barbecue because there is no dairy in it. Just fresh lime juice, a little olive oil and of course some salt and pepper! I haven’t shared a salad recipe in a while so here is one that might be of interest to you my fellow foodie friends my Spicy Chickpea Spinach Salad Recipe. A Salad is usually the main course for me. This time this delicious Spicy Chickpea Spinach Salad was a side dish. I had prepared roasted salmon marinated in herbs for our main course but I was hesitant to add a green salad, so I went with this spicy treat. This simple salad has a wonderful combination of flavors and colors. I spiced it up a bit with Chili flakes and added tomato paste to make it unique. Chickpeas seem to be one of those love-hate relationships for many. I’m not sure why this is but I have come across many who do not enjoy eating chickpeas.
