Simple Sweet Potato Hash

When I think of the ideal fall brunch, I know it needs to involve sweet potatoes. Sweet potato hash is one of my favorites because it’s so versatile—I usually just add whatever extra veggies or meat that I have in the fridge. Bell peppers, zucchini, ground beef, chicken sausage; everything works. If I’m using ground beef or chicken sausage, I sauté that first and use the grease for some extra flavor. There are other days where the only thing I can find are some veggies, which also work perfectly fine! Not optional- adding eggs! Eggs are essential for brunch and really complete the sweet potato hash.

Ingredients
- 1 medium sweet potato
- 1/2 medium green bell pepper
- 1/2 medium red bell pepper
- 1/2 medium zucchini
- 3 eggs
- 2-3 tbsp olive oil
- Flavor God everything seasoning
Instructions
- Heat up the olive oil in the cast iron skillet.
- Sauté the diced sweet potato until they're halfway cooked.
- Add the zucchini and bell peppers.
- Stir in the seasoning until well mixed.
- Make wells for the eggs and cover with a lid until they're cooked.
