I absolutely love a banana bread! Perfect as a breakfast option, or a quick snack throughout the day. Personally, I love mine with dark chocolate chips, but it's really good with nuts or raisins running through instead.


Whats more is this is a great way to use up old bananas, the blacker the better really. Their natural sugars are released as they ripen and the darker they are, the sweeter. If you don't have over ripe bananas, you can put them in the oven on a low heat in the skins until they turn black and they'll be just as good!

Ingredients

  • 125g (1 stick plus 1 tbsp) unsalted butter, softened
  • 250g (1 3/4 cups) light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 large ripe bananas, peeled and mashed up
  • 250g (2 cups plus 1 tbsp) plain flour
  • 2 tsp baking powder
  • 100 g (1/2 cup plus 1 tbsp) dark chocolate chips
Instructions

Heat the oven to gas mark 4/180°C/350°F.
Grease a 900g loaf tin with greaseproof paper and butter or spray oil.
Add the butter and sugar to a bowl and beat together using an electric mixer. Once pale and creamy, add the eggs, one by one, and keep mixing until combined.
Next, add the bananas and vanilla extract and mix in.
In a separate bowl, mix together the flour and baking powder. Sieve it into the wet mixture and mix it up.
Finally, stir in the chocolate chips using a wooden spoon, and pour into the loaf tin.
Pour the mixture into the greased tin, and bake in the centre of the oven for around 45 minutes until browned all over. Check the centre is cooked with a skewer and leave to cool in the tin until its cool enough to handle. Pop it out of the tin and eat it while it's still warm.
