Recipe details
Ingredients
Donut Ingredients
- 1 1/4 cups all purpose flour
- 1/4 Cup Sugar
- 1 Teaspoon of Baking Powder
- 1/2 Teaspoon of Salt
- 1 Teaspoon of Ground Cinnamon
- 1/2 Teaspoon of Ground Nutmeg
- 1/8 Teaspoon of Ground All Spice
- 1 Egg
- 1/3 cup Plain Yogurt
- 1 Teaspoon of Pure Vanilla Extract
- 1 Tablespoon of melted Coconut Oil (you can substitute melted Butter)
- 1/2 Cup of Pure Pumpkin Puree
Sugar Topping
- 1/4 Cup melted Coconut Oil (you can substitute melted Butter)
- 1/2 Cup Sugar
- 1-2 Tablespoons of Ground Cinnamon
Instructions
- Preheat oven to 350 degrees and grease a 24-cup mini muffin tin well.
- In a large bowl, mix together flour, baking powder, salt, cinnamon, nutmeg, and all spice. Set aside.
- In a separate bowl, cream the coconut oil and sugar. Next, add in the yogurt and mix until combined. Finally, add in the pure vanilla extract, pumpkin puree and egg. Mix until combined.
- Mix the dry ingredients with the wet ingredients until a dough forms.
- Roll the dough into roughly 1 tablespoon of dough, and place each ball into the mini muffin cups. The dough will be sticky. You will want to flour your hands for this.
- Bake for 10-12 minutes, or until the pumpkin donut holes ‘spring’ back when touched.
- Once the donuts have cooled, roll each donut hole in the melted butter, and then immediately roll in the cinnamon sugar mixture.
- Enjoy!
