Easy Pumpkin Donut Holes
Pumpkin Donut Holes are the epitome of Fall, moist pumpkin bite size morsels dipped in butter and rolled in cinnamon sugar what could be better?
You’re definitely going to want to make a lot of these, and there's a little secret to making these small bites
A mini muffin tin! No need to roll, this takes care of it and makes so many at once! I found this one at Walmart but they are readily available at many stores and on line.
In a mixing bowl mix together 1 1/2 cups flour, 1/2 cup sugar, 1 teaspoon baking powder, 1/2 teaspoon salt, 2 teaspoon pumpkin pie spice and 1 teaspoon cinnamon
Add one egg and stir, then add 1/4 cup buttermilk, 1 teaspoon vanilla extract and 1 tablespoon melted butter and mix well
Add 1/3 cup pumpkin purée to mixture and stir to incorporate
Grease the tins well and add about 1 1/2 tablespoons to each tin, this is all you’ll need for the perfect size bite!
Bake at 350 for 8-9 minutes, they should spring back when touched
While muffins are cooling, melt 1/2 cup butter in a bowl and place the donut holes in and coat all of them thoroughly
In a separate bowl add 3/4 cup sugar and 3 teaspoons cinnamon, add the donut holes and coat in mixture, it’s should adhere nicely due to the butter
These are best eaten the same day, but can be stored in an airtight container for a few days.
Here’s a little video of me making these 😊
