Did I just say "healthy" and "donuts" in the same sentence?! You bet I did! I've had a box of my favorite grain free pumpkin pancake mix hanging around for a little while and wanted to do something a little more creative than simply making pancakes with it as intended. I have a lot of fun mixing things up in the kitchen and it's definitely the best creative outlet for me. For years I craved the ability to be creative 24/7 and I am so grateful to now have the space and time to dedicate to that desire. However, some days I just want to do bake something EASY yet delicious. And that's where these easy healthy paleo pumpkin pancake donuts come into play!


All you need to make this super simple recipe is your favorite paleo pancake mix, oat milk, eggs, and canned pumpkin puree. If you want to get a little fancy, you can add the SIMPLE icing made with paleo powdered sugar, cinnamon, and pumpkin puree. Simple, clean ingredients make these easy, healthy paleo pumpkin pancake donuts a breeze to make + a treat you can feel good about feeding the whole family. Or, ya know, keep them all for yourself. I'm not judging.


I'm going to be dropping a few of these paleo pumpkin pancake donuts off to some friends this week. We were hoping that we miiiiight be able to attempt a very small, intimate Friendsgiving this coming weekend, but since many of us are going to see family for Thanksgiving we thought it was best to stay safe, stay home, and have a group Zoom call instead. Of course, just because Friendsgiving is cancelled, does not mean friendship - or my baking - is cancelled, so the least I can do for those that I love is spread a little holiday cheer by sharing these easy, healthy paleo pumpkin pancake donuts with my besties!

Ingredients
For the Donuts
  • 2 cups pumpkin pancake mix
  • 1 cup oat milk
  • 2 tbsp pumpkin purée
  • 3 large eggs
  • 2 scoops collagen protein powder (optional)
For the Icing
  • 2/3 c paleo powdered sugar*
  • 1 tbsp oat milk
  • 1 tbsp pumpkin purée
  • 1/4 tsp cinnamon
Optional Toppings
  • Pumpkin Seeds
  • Pecans
Instructions

Pre-heat over to 350F and grease 1 silicone donut pan.
In a large mixing bowl, add pancake mix, collagen if using, oat milk, eggs, and pumpkin puree and whisk until a smooth batter forms.
Pour into silicone baking pan and bake for 18-20 minutes or until a toothpick comes out clean.
While the donuts are baking, prepare the icing in a separate bowl. If you're using paleo powdered sugar, blitz the monk fruit in a blender first, then add to bowl with oat milk, pumpkin puree, and cinnamon.
Place icing in fridge while the donuts bake. Allow donuts to cool at least 20 minutes before frosting.
If desired, garnish with pecans and pumpkin seeds.
Tips
  • *To make paleo powdered sugar, add monkfruit sweetener to a high speed blender + pulse until powdered sugar texture is formed.
