Stir fry is a dish I make time and time again when I want to veggie-loaded dish that doesn't compromise flavor. This meal can be customized to accommodate any diet or palate. My family adores this stir fry and some even prefer it as leftovers--that is, if it can last that long!
My recipe is vegan and gluten-free friendly made with simple ingredients. It's the perfect meal for cleaning out the fridge and using up leftover veggies. Add chicken, beef, or tofu for a protein boost. If you're in need of a quick and easy weeknight dinner, this dish is sure to satisfy.

Veggie Stir Fry
Recipe details
Ingredients
- 1 large onion
- 3 cloves minced garlic
- 2 large carrots
- 1 medium zucchini
- 1 bell pepper
- 8-10 small mushrooms
- 1.5 tbsp olive oil
- 8 oz rice noodles
- 1/4 cup liquid aminos
- 3 tbsp sesame oil
- 1 tsp ground ginger
- 1 tsp garlic powder
- 1 tbsp sesame seeds
- salt and pepper to taste
Instructions
- Prepare the veggies. Julienne with a knife or use a vegetable peeler for small, thin pieces.
- Heat the olive oil over a large skillet or wok. Add onions and cook until they begin to brown.
- Add garlic and cook another minute.
- In a separate pot, bring water to a boil and follow package instructions for cooking rice noodles.
- Meanwhile, add remaining veggies to the skillet and allow to cook until veggies have softened slightly but still have a bite. This should take around 7-9 minutes.
- Add cooked rice noodles to skillet and toss until combined. Coat with sesame oil and liquid aminos. Add dry seasonings and stir until noodles are coated.
- Serve hot with sesame seeds on top for optional garnish.
Tips
- If you don't have rice noodles, substitute spaghetti or lo mein noodles.
- Adjust the veggie add-ins according to preference. Some other favorites of mine are edamame, green onion and spinach.
- Soy sauce can be substituted for liquid aminos. Fresh ginger can be substituted for ground.
