Refrigerator zucchini pickles are a great alternative to cucumber pickles. They're easy to make, no cooking or canning required! Zucchini pickles are perfect for using up any leftover late summer zucchini in your fridge.

  • Zucchini
  • Garlic
  • Fresh Dill
  • Apple Cider Vinegar

  • Pickling Spice
  • Red Pepper Flakes
  • One Pint Glass Jar


Recipe Variations


Replace the zucchini with raw or slightly steamed cauliflower, carrots, asparagus or green beans.


Add a few slices of hot peppers such as jalapeno or cayenne for spicy pickles.

Ingredients

  • a few sprigs of fresh dill
  • 3 to 4 cloves fresh garlic chopped
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon sea salt
  • 1 tablespoon  pickling spice
  • ¼ teaspoon red pepper flakes (optional)
  • filtered water to fill up the jar
Instructions

slice the zucchini into spears and place into a one-pint Mason Jar alternating with the cloves of garlic.
add the salt, pickle spice and dill.
pour in the vinegar and water.
cover the jar and gently shake to mix all of the ingredients together.
store your zucchini pickles in the refrigerator for up to one month
Tips
  • Be sure that the zucchini is completely submerged in the brine for the best-tasting pickles.
  • Change up the herbs and try adding cilantro, basil, oregano or any of your favorite herbs.
  • Make them spicy by adding hot pepper flakes.
  • Try pickling vegetables such as steamed cauliflower, asparagus, or carrots.

    How many zucchini’s is used for this recipe. It mentions how many spears it makes, but doesn’t state how many zucchini’s are used. Thank you.

      Hi Lynn, It depends on the size of the zucchini. If I use a pint-sized jar, one medium zucchini will usually do it.
