Spicy Stir-Fry Egg Skillet

Every time I’ve shared this to my stories, I get flooded with heart eye and flame emojis, accompanied by exclamations of approval. I’m guessing that means people think it looks good 😆.

I feel almost silly sharing “recipes” like this, but then I remember that those simple, winning combinations are what make up so much of my healthy meal repertoire, and can make the difference between someone really enjoying nutritious food, or not. This is definitely one of those dishes for me--it's simple, easy, yet delicious and oh-so-nutritious, and my husband likes it about as much as I do, which makes it an even bigger win! So here it is:


Spicy Stir-Fry Egg Skillet

Ingredients

  • 1 large carrot, cut into lazy matchsticks
  • 1 red bell pepper, diced
  • 6ish mushrooms, sliced
  • 1 C @traderjoes cauliflower fried rice blend
  • Sesame oil
  • Fish sauce
  • 4 eggs
  • 1/3 C Fresh cilantro, chopped
  • 1 Lime
  • Sriracha
  • (1/2 C cooked quinoa optional)
Instructions

Sauté vegetables in oiled skillet until tender.
Add quinoa. Season with salt and pepper, and add a splash of sesame oil, and fish sauce.
Level mixture out, and then crack eggs on top, and cover with lid until eggs are cooked to desired doneness.
Top with cilantro, lime, and sriracha. Devour.
