Delicata Squash Rings
Delicata squash is one of my favorite Fall foods, not only is it delicious but the skin is edible and for me that’s a game changer in meal preparation, no peeling?!? I’m all in
These make a great side dish with any kind of meat or even a burger in place of fries!
I give the squash a quick wash then chop off the ends
Hollow out the squash fully of all the seeds
Once all hollowed out, slice in 1/4 inch slices, and in case I didn’t already say it, don’t peel these, the skin is edible and yummy!
Beat an egg in a shallow bowl
Put one cup of shredded or grated Parmesan in another bowl
Dip each round I got the egg
Then into the cheese pushing down slightly so it sticks
Then the slice over and coat the other side in cheese
Preheat oven to 350 and place the coated rounds on a parchment paper lined baking sheet
Sprinkle with Italian seasoning and bake for 20 minutes. I like to serve these with a side of marinara sauce.

Ingredients
- 1 Delicata squash
- 1 egg beaten
- 1 cut grated or shredded Parmesan cheese
- italian seasoning
Instructions
- Heat oven to 350
- line a baking sheet with parchment paper
- beat one egg in a shallow bowl
- place 1 cup of Parmesan cheese in another bowl
- cut off ends of squash
- hollow out the squash removing all the seeds
- slice into 1/4 inch rounds
- dip each round into the egg
- then dip into cheese on both sides
- place on baking sheet
- sprinkle with Italian seasoning
- bake for 20 minutes
Tips
- Try these with other seasonings like smoked paprika or chili lime for a different taste!
