I grew up eating chips, didn’t we all? And its safe to say that chips are my guilty pleasure. The chips from my childhood were fried in lard but back then we weren’t very health conscience.

Today, we are always looking for healthier options to substitute unhealthy eating like my favorite chips. Below are three delicious recipes to satisfy even the biggest chip fiend.

Each type of chip - zucchini, apple, and root vegetable - have their own unique flavor.

Using fresh, local produce insures you’re getting the best.

I used golden beets just because I loved the color. They don’t taste any different from red beets - they’re just prettier icon

If you use a mandolin, your slices will be uniform; however, if you don’t have one, use the sharpest knife you have and take your time to make each slice the same as the last.

Ingredients
Ingredients for Zucchini Chips
  • 1 medium zucchini
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/2 tsp paprika
  • 1 Tablespoon olive oil
Ingredients for Root Vegetable Chips
  • 1 medium parsnip
  • 1 medium sweet potato
  • 2 medium beets
  • 2 tsp canola oil
  • 1/2 cup Parmesan cheese
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 1/2 tsp oregano
Ingredients for Apple Chips
  • 1 medium apple
  • ground cinnamon - optional
Instructions
Instructions for Zucchini Chips
Heat oven to 425 degrees
Wash zucchini
Using a mandolin, slice zucchini on 1/4 inch thickness setting
Place slices onto a paper towel in a single layer
Place a paper towel on top of slices and press to remove as much moisture as you can
Drizzle olive oil onto a baking sheet and use a brush to coat the baking sheet
In a small bowl, whip one egg
In another small bowl, combine breadcrumbs and paprika
Dip the slices of zucchini into the egg and then into the breadcrumb mixture
Place each slice onto the oiled baking sheet in a single layer
Bake for 10 minutes
Turn slices and bake an additional 7 minutes or until golden brown
Instructions for Root Vegetable Chips
Heat oven to 425 degrees
Wash and peel each vegetable
Using a mandolin, slice each vegetable on the 1/8 inch thickness setting
Place all vegetables into a large bowl and drizzle with canola oil
Stir to coat
Combine remaining ingredients and add to vegetables
Stir to coat
Place racks onto baking sheet
Arrange vegetable slices in a single layer onto racks
Bake for 7 minutes
Turn all slices and bake an additional 9 minutes until brown
Instructions for Apple Chips - Air Fryer
Wash 1 medium apple - do not peel or core
Using a mandolin, slice apple on the 1/8 inch thickness setting
Remove any seeds from slices
Place apple slices into the air fryer basket following manufacture’s guidelines
Air Fry at 400 degrees for 3 minutes
Flip slices; air fry for 3 minutes
Continue to air fry and flip the slices every 3 minutes until crispy
Tips
  • Slice the vegetables and/or fruit as thinly as you can. This will ensure your chips are crispy
