Quick Weeknight Taco Casserole

If you are like me, you are super busy during the week and you are always looking for quick things you can throw together for your family that still actually taste homemade and good for that matter. My husband and I are both teachers and coaches so our time is very limited. I love this taco casserole because I can get home, throw it together and it is super yummy on top of that! WIN/WIN am I right?? Do you have that one recipe you always go to because its quick?

Place beans in bottom of pan. You can use either black, pinto or refried beans. Add sour cream on top of that.

Put ground beef and guacamole on top of the sour cream.

Drain corn and place a can of corn on top of the guacamole.

Sprinkle one cup of shredded cheese then place in oven at 350 degrees for 15 minutes.

Take out of oven and add olives, tomatoes and fritos. Place back in oven for additional 5 minutes.

Take out of the oven and then add lettuce and additional cup of cheese.

Ingredients

  • 1 lb ground beef
  • 1 pkg taco seasoning
  • 1 tomato, diced
  • 1 can black olives, drained
  • 1 cup sour cream
  • 2 cups cheddar cheese, shredded
  • 1 can beans or your choice
  • 1 bag Fritos, regular or chili
  • 1 container guacamole
  • 1 cup salsa
  • shredded lettuce
  • 1 can corn, drained
  • 1 onion, chopped
Instructions

Preheat oven to 350 degrees.
Brown ground beef and onions together in skillet.
Drain grease.
Add 3/4 cup of water and 1 pkg of taco seasoning and simmer for 5 minutes.
Spread refried beans or black beans on bottom of 9x13 baking dish.
Spread sour cream over refried/black beans
Spread prepared ground beef mixture over the sour cream
Spread guacamole over the meat mixture.
Layer the can of drained corn over the guacamole
Cover with 1 cup of the cheese and bake for 15 minutes.
Remove from the oven and add fritos, diced tomatoes and black olives to the top.
Sprinkle remaining cheese on top.
Return to the oven and bake an additional 5 minutes
Remove from oven and sprinkle lettuce on top.
SERVE!
Tips
  • You can use any type of beans you choose.
