Saint Patrick’s Day Dinner Party

Garlic And Chive Roasted Baby Potatoes

Made with garlic butter and and Parmesan cheese, these garlic and chive roasted baby potatoes are melt in your mouth delicious! Plus, they are super easy to make. A recipe that is both simple and delish? That is always a win, win in my book.

If you are a carb lover like me, I think you’ll agree that they are the perfect side dish to complement just about any meal. And what is a Saint Patrick’s Day dinner without potatoes?


Ingredients for Garlic And Chive Roasted Baby Potatoes

  • 4 tablespoons unsalted butter
  • 1 Tablespoon minced garlic
  • 3 Tablespoons chopped chives
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon salt (or more to taste)
  • 2 Tablespoons grated Parmesan cheese
  • 1 1/2 lbs. baby potatoes (rinsed)

Instructions for Garlic And Chive Roasted Baby Potatoes

Step 1

Preheat your oven to 400℉. Then, melt the butter in a small saute pan over medium-low heat. When the butter is melted, add the garlic, chives, black pepper, salt, and Parmesan cheese. Stir to mix well.

Step 2

Toss the potatoes with the butter mix. Stir to coat and then transfer them to an oven-safe baking dish. Cover the potatoes with aluminum foil and roast for 45 minutes.

Step 3

Test the potatoes with a fork or knife to confirm that they are tender. If they are still a bit firm, just roast for an additional 5-10 minutes or until they are done.


Step 4

When done, remove from the oven. Spoon the excess butter mixture from the bottom of the baking dish over the potatoes. Sprinkle with additional chives and Parmesan cheese if desired and serve immediately.

How to Store Leftovers

Leftovers can be safely stored in the fridge for up to 4 days. I like to keep mine in an airtight food storage container like these glass containers. I received a set of them this past fall and they have become my go-to containers for keeping leftover food tasting fresh. My favorite feature is the easy vent lids. No more messy microwave explosions. Hallelujah! And they are dishwasher safe for quick and easy cleanup.

  • 4 Tablespoons unsalted butter (melted)
  • 1 Tablespoon minced garlic
  • 3 Tablespoons chopped chives
  • 1/8 teaspoon ground black pepper
