Chorizo Waffle Fries

A quick, albeit super unhealthy, weeknight meal; these waffle fries are just different enough from normal cheese fries to keep you on your culinary toes.

I cheated for the sake of quickness (and laziness) and used store-bought frozen fries. If you prefer to substitute your homemade fries, that will only serve to improve this dish.

The chorizo, to me anyway, is what sets this dish apart. Easily one of, if not my favorite, sausages. It adds a fantastic spicy flavor that cannot be duplicated.

Ingredients
Cheese Sauce
  • 3 tablespoons of butter
  • 3 tablespoons of flour
  • 1 cup of milk
  • 1 cup of shredded cheddar cheese
  • Salt and pepper to taste
Chorizo Fries
  • 1 bag of frozen waffle fries
  • 1 tube of chorizo (9 ounces)
  • 1 cup of cheese sauce
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons of sour cream
  • 1 handful of candied jalapenos
  • 1 stalk chopped green onions
Instructions
Cheese Sauce
Melt butter and whisk in flour on medium heat to make a light blonde roux (about 5 minutes).
Add milk and whisk to combine.
When the sauce is starting to thicken, begin adding cheese a little at a time until all is incorporated.
Taste and adjust seasoning if needed.
Chorizo Fries
Heat oven to 350 degrees Fahrenheit. Remove chorizo from casing and fry in a skillet, using a spatula to break up chorizo. Cook for about five minutes on medium heat until chorizo is cooked through. Set aside.
Fry or bake waffle fries according to directions. When all fries are done, place on a sheet pan and top with cheese sauce, chorizo, and shredded cheese. Bake for just a few minutes until the cheese is melted.
Remove from the oven and top with remaining ingredients. Serve hot.
