Crepes can be a delicious treat anytime of the day. Here’s a dessert-worthy recipe you can make for your family or guests.

Make the Sweet Cream Filling First

Filling Ingredients:

  • 4 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup powdered sugar, sifted
  • 1/2 teaspoon vanilla extract

Blend cream cheese and sour cream together until smooth. Add powdered sugar and vanilla. Mix until smooth. Chill.

Next, Make the Crepe Batter

Crepe Batter Ingredients:

  • 1 1/4 cup flour
  • 2 Tablespoons sugar
  • pinch of salt
  • 3 eggs
  • 1 1/2 cups milk
  • 2 Tablespoons melted butter
  • 1 teaspoon lemon extract (I squeezed 1/2 a fresh lemon into it instead)

Place all ingredients into a blender and mix until smooth. Chill 2 hours or overnite.

(I used my mixer and the batter was lumpy; next time I’m using a blender…tip of the day)

You can make crepes in a non-stick frying pan, but an electric crepe maker makes it so much easier and fun! I used this vintage harvest gold one of my mom's, but a newer version would work just as well.

Now for the fun part!

Make Crepes with Crepe Maker

With an electric crepe maker, you can simply follow the instructions!

Preheat crepe maker. You may want to spray the surface with cooking spray, but wipe off most of it with a paper towel (otherwise the batter won’t stick at all…ask me how I know;)

Pour batter into the crepe maker pan/dish.

When the crepe maker is up to tempature, invert the maker and dip into the batter. Count 5 seconds. Then tip back up and let cook for 1 minute, or until you see bubbles forming under the surface.

With a non-stick spatula, lift up crepe. You don’t have to flip them over to cook the other side, but I did.

Place cooked crepes on parchment paper if you don’t want them to stick to each other. Or start filling and eating as they come off!

Assemble Delicious Dessert Crepes

Add generous amount of sweet cream filling down the middle of the crepe. Roll up. Add raspberries, blackberries, and sliced strawberries. Sift powdered sugar on for garnish. Finish off with Heath bar crumbles.

I would definitely recommend Delicious Dessert Crepes; they are so good!
