These simple air fried carrots and potatoes are incredibly easy and seasoned to perfection. With spices you likely already have in your pantry and no need to peel the carrots or potatoes (unless you just really want to... 😉), this is one of the easiest side dishes to make! Ingredients

  • 10 ounces (about 2) gold potatoes
  • 6 ounces (about 2) carrots
  • 2 teaspoons extra virgin olive oil
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly-ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon smoked paprika
Instructions

Chop the potatoes and carrots into pieces about 1-inch by 1-inch in size.
In a medium bowl, add the olive oil and toss (using your fingers) until each piece is coated.
Sprinkle with the salt, pepper, and seasonings. Stir to distribute.
Preheat air fryer to 450ºF.
Add the vegetables to the basket and fry for 10 minutes.
When done, use tongs or pour the contents onto a platter.
Enjoy warm or store in an airtight container for up to one week.
Tips
  • A little olive oil goes a long way! Take a few minutes to massage the olive oil into the carrots and potatoes - you'll find it coats each piece.
