3-Step Crockpot Mashed Potatoes

This recipe has gone BANANAS on this blog since 2016. It's a heavy favorite during the holidays, especially Thanksgiving when all of America is making mashed potatoes. We all want this creamy and dreamy side dish, but we don't want to be stuck standing at the stove right up to the big meal. Instead I created this super easy way to make mashed potatoes ahead of time so they can sit on warm in the crockpot waiting and still taste great when it's time to sit down and eat. These buttery spuds are delicious!

Let's be real mashed potatoes are pretty much a year around thing in our house. We eat them at least once a month - with meatloaf, ribs, steaks or any baked chicken dish. Pretty much the ultimate comfort food. Growing up my Mom always, always, always made homemade mashed potatoes. It was a staple with her delicious roast beef and to be honest I never even knew instant potatoes were a THING until I had them at a friend's house. I turned up my nose.

Real deal mashed potatoes are much better than their cheaper, side kick cousin. Plus once you've made them - they are easy! Minus the 10 minutes of prep needed to peel and wash them, there really is no work involved. Using the crockpot in this recipe allows you to do other things - in the case of it being the holidays - work on all the other side dishes, main meats and desserts. Or perhaps clean the house?

I add butter {of course}, milk, Parmesan cheese {it gives the mashed potatoes a sharp, nutty flavor} and cream cheese to these taters. The cream cheese gives them a smooth depth without making them over cheesy. I think this combo tastes great! But always, if your family likes other cheeses or even flavored soft cheeses instead of plain cream cheese, then by all means! In other words - make these your own, but keep the basics the same.

And since most of us are eating holiday meals with more than just our immediate family this batch serves a crowd - I usually say around 12 adult servings. So more if you are just feeding littles! I have not attempted on doubling the recipe {I'm sure someone will ask}, so I cannot say for sure how that turns out, but I'm guessing it would work fine. You would just need to add some cook time since the crockpot would be extra full with more potatoes.

  • 3 lbs baking potatoes, peeled and cut into large chunks
  • 1 cup chicken stock
  • 3 cloves garlic, minced
  • 1/2 stick unsalted butter
  • 4 oz cream cheese, softened
  • 1/2 cup milk
  • 1/4 cup Parmesan cheese
  • 1 t garlic powder
  • 1 t onion powder
  • 2 t salt
  • parsley, for garnish

InstructionsStep 1

  1. Place potatoes, garlic and broth into the crockpot. Set to LOW and cook for 4-5 hours, or until the potatoes are fork tender.

Step 2

  1. When the potatoes are done, add in the butter, cream cheese, milk, Parmesan and seasonings.

Step 3

  1. Using a potato masher, mash the potatoes to your desired consistency - leaving slightly chunky or to a more smooth potato texture.
  2. Taste test and see if the potatoes need anymore salt. Sprinkle with parsley if desired.
  3. Serve immediately or keep the crockpot on WARM until serving.

Notes:

Any cheeses or seasonings can be added to these mashed potatoes - whatever your family enjoys.
