A plate of roasted green beans.

The best way to prepare fresh or frozen vegetables is by roasting them. Roasting brings out their sweetness, caramelizing the natural sugar within vegetables, giving them a delicious savory flavor. Not only does roasting improve vegetables' taste, but the vegetables become beautifully crispy on the outside and deliciously tender on the inside.

These roasted frozen green beans could not be easier to throw together. Like air frying frozen green beans, no washing or chopping is needed. Frozen green beans freeze at their peak of freshness, have a longer shelf-life and are overall more economical.

This delicious vegetable side dish is perfect for busy weeknights. It requires minimal prep time, and there is minimal equipment needed. This quick and easy recipe is sure to be one you add to your vegetable side dish rotation. If you like this recipe, be sure to try my garlic parmesan green beans too.

Suggested Equipment

  • Large Tongs

Storage

Store cooled leftover roasted green beans in an airtight container in the refrigerator for up to 4 days.

Can I roast green beans and then freeze them? While roasted vegetables are best eaten after roasting them, you can freeze roasted vegetables. Place cooled green beans onto a small sheet tray and place the tray in the freezer. Once the beans have frozen, transfer them to an airtight container or freezer bag. Freeze the beans for up to 2 months—thaw them completely in the refrigerator before reheating and eating.

Expert Tips

  1. Keep the green beans frozen, but de-ice if necessary.
  2. Preheat the oven. Only roast the beans in a preheated oven for even cooking,
  3. Roast vegetables on high heat. The higher temperature promotes caramelization and crispiness.
  4. Make sure all green beans are evenly coated in olive oil and seasoning.
  5. Avoid overcrowding the sheet pan. Space the green beans out on the tray for even cooking.

Frequently Asked Questions

Do you thaw frozen green beans before roasting them? There is no need to thaw frozen green beans before roasting them. In fact, thawing the beans before roasting them can promote too much moisture resulting in soggy green beans.

Do green beans need to be blanched before roasting?Frozen green beans do not need to be blanched before roasting them.

What spices go well with green beans?Green beans are a blank canvas for flavor. Most savory spices complement this vegetable; however, my favorite spices to season green beans include garlic powder, onion powder, dried parsley, thyme, and crushed red pepper flakes.

Why are my frozen green beans soggy? There was most likely ice from the packaging that melted into your green beans, making them soggy. While you should not thaw frozen green beans before roasting them, do de-ice them to prevent excess moisture.
