Whole Roasted Cauliflower

Cooking an entire head of cauliflower may seem intimidating, but it is actually pretty simple and way less messy than chopping it into a bunch of little pieces. You can keep it super simple by roasting it using nothing more by olive oil and salt, but for this recipe we'll be serving the cauliflower with a delicious whipped feta sauce. I love charring it using a grill, but if you only have an oven to work with like me, then you can follow along below! If you aren't a fan of cauliflower, then just make the dip and serve with pita. Trust me.

Ingredients

  • 1 head cauliflower
  • salted water for boiling
  • olive oil to drizzle
  • 1 cup crumbled feta cheese
  • 1 - 2 cups Greek yogurt
  • 1/4 cup toasted pine nuts to garnish
  • 1 tbsp chopped parsley to garnish
  • 1/4 tsp dried sumac to garnish (optional)
  • 1/4 tsp za'atar to garnish (optional)
Instructions

Heat oven to 425F and bring a large pot of salted water to a boil
Place the head of cauliflower head down in the pot, and bring the temperature down so it doesn't boil over
Boil for approximately 10 minutes, until it softens
Remove the cauliflower from the water using a colander to release excess water, then place on a tin foil lined baking sheet
Drizzle with olive oil and sprinkle with more salt, then place in the oven for 45 minutes - 1 hour until cooked and golden brown
In a food processor or blender, combine the feta cheese and Greek yogurt until smooth then spread it out on a plate
Set the cauliflower on top of the feta spread then drizzle with olive oil
Garnish everything with toasted pine nuts, parsley, sumac, and za'atar
Tips
  • For a garlic whipped feta, add garlic cloves (roasted or raw) to the food processor
  • Broil cauliflower at the end for extra char
