Mashed Cauliflower Potatoes

It seems Cauliflower is all over these days. They can be made into just about anything. Here's an awesome low-fat, low-carb substitute for mashed potatoes.

My whole family loved these....and that's a feat in and of itself!

Mashed Cauliflower can be topped with your own gravy. No one will suspect it's Cauliflower instead of Potatoes!

Chicken and Mashed Potatoes, but in this case Mashed Cauliflower! You can substitute Mashed Cauliflower with any meal you would normally have Mashed Potatoes with.

Chives not only add color to Mashed Cauliflower but give it a little zing!

Mashed Cauliflower can be substituted for Mashed Potatoes at any meal. Serve as you would Mashed Potatoes.

Ingredients
Supplies
  • 1 1/2 pounds Cauliflower Florets
  • 1/4 cup and 2 Tablespoons Mashed Potato Flakes
  • 1/4 cup and 2 Tablespoons low-fat Milk ( I used non-fat Milk)
  • 2 Tablespoons and 2 1/2 teaspoons Margarine
  • Salt and Black Pepper - to taste

Instructions
1.Place a steamer insert into a pot and fill with water to just below the bottom of the steamer.
2.Bring water to a boil.
3.Add Cauliflower, cover and steam until tender, approx. 20 minutes.
4.Transfer Cauliflower to a large bowl.
5.Add Mashed Potato Flakes, Milk, and Margarine.
6.Mash with a potato masher until Cauliflower mixture is fluffy.
7.Season with salt and pepper. 
Serve as desired. Serves 6.
Tips
  • If you're watching your calories and desire sour cream with your mashed cauliflower, you can substitute plain yogurt.
  • You can use your electric mixer to "mash" the cauliflower. It whips them up nicely.

    I use claiflower only and add some cream cheese in stead of butter/nargerube,

    no potato flakes for me. It’s a keto receipe also.
