One of our favorite side dishes is roasted carrots that get tossed with an easy sauce that gives the carrots incredible flavor. This recipe not only tastes great, but it has amazing health benefits due to its ingredients.

Carrots get a boost of flavor with a sauce made with melted anchovies.


Don’t let the word anchovy scare you from trying this dish! I promise you it is so good!


My husband and my father-in-law frequently ask me to make this side dish.


Anchovies melt into a smooth paste that disappears into a sauce but imparts a flavor like no other. I learned this from watching Martha Stewart long ago.

A bowl of these carrots makes a terrific side dish and it's incredibly healthy.

Ingredients

  • 1 1/2 lbs of carrots or a large bag of baby carrots
  • 1 T olive oil
  • 2 large cloves of garlic, chopped
  • 1 (2 oz) tin of anchovies
  • Salt to taste
  • 1/4 cup chopped fresh Parsley
Instructions

Heat oven to 425 degrees F.
In a large bowl, toss carrots with 1 T olive oil and salt to taste.
Spread carrots on a large baking sheet lined with parchment paper or a Silpat.
Roast carrots for 25 minutes.
While the carrots roast, combine the contents of the anchovies tin with chopped garlic in a small saucepan and heat on low until the anchovies melt into a smooth sauce. Use a simmer flame if you have a gas stove or a very low heat with an electric stove.
After the carrots are done, stir the anchovy mixture into the roasted carrots along with chopped parsley.

Tips
  • If you have leftovers, this dish tastes just as great reheated.
