I am always looking for easy side dishes for dinner. Sometimes I like to change up the colors of my veggie side dishes and carrots happen to be a favorite in my house across the board with everyone.


These ginger glazed carrots are so delicious and come together rather quickly. I love the hint of ginger on these softened carrots, it's just perfect. The taste is great and it goes well with so many proteins. Chicken or pork cutlets, pan fried tilapia or baked salmon. It's just a super versatile side dish and the bright orange color is awesome! Young kids love the color and the older ones will appreciate the flavor as well as the colorful plate.


It's a winner all the way around.

Ingredients

  • Ingredients:
  • 1 lb. baby carrots, sliced lengthwise
  • 3 tbsp. unsalted butter
  • 2 tbsp. sugar
  • 1/4 tsp. freshly grated, ginger
  • kosher salt and black pepper, to taste
  • 1 tbsp. fresh tarragon leaves or dill frongs, chopped
Instructions

In a large, high-sided pan, melt the butter over medium heat. Add the carrots and sugar, ginger, salt, and pepper to taste. Stir together and cook for 1 to 2 minutes. 
Add water to just cover the carrots, raise the heat to high, cover and cook until the water boils and the carrots turn bright orange, about 5 minutes. Stir in the chopped tarragon or dill.
Serve immediately.
Tips
  • NOTE: Do not add too much water, as it will take longer to evaporate and the carrots will become mushy.
