Oven Roasted Brussel Sprouts With Bacon

The perfect match of vegetables and bacon that can be cooked in the oven and best of all, it is gluten free!

This pairs perfectly with any main dish and best of all, can be prepared ahead of time. I promise this is a winner, even if you aren’t a fan of brussel sprouts. Speaking for myself, I didn’t eat them until recently when I discovered the magic of preparing them with bacon and red onions. This recipe is a game changer because it is delicious AND gluten free too.


Tips for Cleaning for Brussels Sprouts


When cleaning your Brussels sprouts and cutting them into smaller pieces, here are a few tips.

  • Start by using a sharp knife to slice off the base where the balls were growing to the stalk. Put them all in a large bowl and soak in cool water for about 10 minutes to remove any remaining dirt or debris. Rinse throroughly and then pat dry with paper towels.
  • If there are any outer leaves that are damaged, remove them and throw them in the trash. Healthy leaves that have fallen off during cleaning can be added to the recipe.
  • If there are any large sprouts, cut them into halves or even fourths.
Ingredients


  • 2 Pounds Brussel Sprouts
  • 1 Large Red Onion
  • 8 Slices Thick Bacon
  • 1/4 Cup Olive Oil
  • Salt and Pepper
Directions to Prepare the Oven Baked Brussel Sprouts


Start by preparing the brussel sprouts as explained above. Line a large baking dish with tinfoil and place the brussel sprouts evenly inside. Be sure to add the extra leaves that have fallen off. They cook faster and get really crispy. These are actually the bites that my family fights over.

Next, Chop the onion into small pieces and sautee in the olive oil for a few minutes.

Pour this over the sprouts. Add a little salt and pepper if desired for extra flavor.

The last ingredient to add is the bacon. This can be fried first and then added in crumpled pieces OR cut into pieces and put on to bake in the oven. We prefer it fried first.

Baking


Bake in the oven at 400 degrees for 3o minutes COVERED in tinfoil. Then remove the tinfoil and turn the oven to BROIL for a few minutes until the bacon is crispy.
