Ingredient Notes

  • Use either firm tofu (momen tofu) or extra-firm tofu because they hold their shape well during cooking and are easy to handle.
  • Potato starch adds a crispy texture to the tofu pieces. You can substitute it with corn starch, or all-purpose flour.
  • Vegetable oil for pan-frying tofu. Sesame oil works well, too.
  • Mirin, soy sauce, sake, and sugar for the homemade teriyaki sauce. You can substitute sugar with maple syrup or honey.
  • For serving, use Japanese rice, shredded nori, and vegetables. I chose roasted broccoli and carrots, but feel free to add onions, green peas, green onions, bell peppers, or any vegetables you love.

  • You can adjust the teriyaki sauce to your liking; add more sugar and mirin for a sweeter flavor.
  • For the best experience, serve your teriyaki tofu on freshly steamed Japanese rice.

Storage and Reheating

Ingredients

  • ▢ 1 block Firm tofu, 350g
  • ▢ 3 tablespoon Potato starch
  • ▢ Vegetable oil, for pan frying
For The Teriyaki Sauce
  • ▢ 1 tablespoon Mirin
  • ▢ 1 tablespoon Soy sauce
  • ▢ 1 tablespoon Sake
  • ▢ 1 teaspoon Sugar
For Serving
  • ▢ 2 servings Cooked Japanese rice
  • ▢ Shredded nori
  • ▢ Roasted or steamed vegetables
  • ▢ Toasted sesame seeds, for garnish
Instructions

Prepare the Tofu: Place a heavy object on top of the tofu for 30 minutes to remove excess moisture. Cut the tofu into small pieces.
Pan-fry the Tofu: Heat vegetable oil in a frying pan over medium heat. Cover each tofu piece with potato starch and pan-fry until crispy. Flip them over to ensure both sides are nicely crispy. Transfer the tofu to a wire rack to drain the excess oil, once done.
Prepare the Teriyaki Sauce: In the clean frying pan, combine mirin, soy sauce, sake, and sugar for the teriyaki sauce. Bring the mixture to a simmer over medium heat, stirring occasionally to dissolve the sugar and blend the flavors.
Combine Tofu with Sauce: Return all the cooked tofu to the frying pan and coat it with the teriyaki sauce.
Assemble the Tofu Donburi: Serve cooked rice in a medium bowl, sprinkle shredded nori over the rice, and place teriyaki tofu on one side and roasted vegetables on the other. Garnish generously with sesame seeds.
Tips
  • Storage: Store any leftover teriyaki tofu in an airtight container in the fridge and consume it within two days. When you're ready to eat, heat it in the microwave.
  • Make sure to get rid of extra water from the tofu thoroughly. This prevents it from being watery and helps it absorb the teriyaki sauce better. Follow a simple guide for pressing tofu.
  • You can adjust the teriyaki sauce to your liking; add more sugar and mirin for a sweeter flavor.
  • For the best experience, serve your teriyaki tofu on freshly steamed Japanese rice.
