Crispy Rice Chex Treats

Crispy rice Chex treats are one of my favorite “no bake” snacks to make! These delicious treats are gluten free, nut free, and SO YUMMY! School starts in a little over a week. This is a great recipe to save for a fun after school snack. This recipe is made up of four simple ingredients (five if you count the optional, but highly recommended sprinkles added at the end).

I like to make to make crispy rice Chex treats in a 9” pie plate, then serve the treats in slices. No pie plate at home, no problem. These treats can be made in an 8”x 8” or 9” x 13” pan and sliced into squares. All you need to do is gather some simple ingredients to get started.


CAN THESE TREATS BE MADE IN THE MICROWAVE?


Yes, these treats can be made in a microwave!

Prepare the 9” pie plate with cooking spray. Combine butter and marshmallows in a microwave safe bowl and microwave over High heat for 2 minutes. Stir butter and marshmallows together, and microwave over High heat for 1 more minute. Add vanilla extract to melted butter and marshmallows and stir until smooth. Fold rice Chex cereal into marshmallow mixture until fully combined.

Use a spatula to transfer ingredients into prepared pie plate. Use a spatula sprayed with cooking spray or a piece of wax paper to press ingredients evenly into your prepared pie plate.

Ingredients

  • 5 cups rice Chex cereal
  • 10oz mini marshmallows
  • 1/4 cup butter
  • 1 tsp vanilla extract
Instructions

Spray a 9” pie plate with cooking spray. Melt butter in a large saucepan over medium heat. Add marshmallows to melted butter and stir until marshmallows are melted and fully combined with the melted butter. Remove from heat and add vanilla extract to the marshmallow and butter mixture. Fold rice Chex cereal into the marshmallow mixture and stir all ingredients until fully combined. Use a spatula to transfer ingredients to your prepared pie plate. Use a piece of wax paper or a spatula sprayed with cooking spray to press ingredients evenly into the pie plate. An optional, but highly recommended step is to top the crispy rice Chex treats with sprinkles. Let the treats set for at least two hours before serving. Slice and serve (serves 8). Cover and store for up to 3 days if they last that long.
