I love the holidays but all the eating and heavy foods make me crave for something lighter and more refreshing. I love a good mixed salad with lots of different textures and flavors. Salads are so unsatisfying unless it hits all that for me. Aside from a variety of greens, I like different vegetables, fruit for some sweetness and crunchy bites. Every bite should be slightly different and exciting to eat! A boring green salad just won’t do in my books.


I have loaded up this salad with lots of sweet and savory ingredients, crisp vegetables, creamy and crunchy textures. The hot mustard dressing brings everything together and tames down the sweetness of the candied salmon and apples. I’ve also developed this recipe as a serving for one as a main dish but it is completely scalable simply by doubling or tripling the ingredients. I hope you enjoy it!

Ingredients
Salad
  • 2 cups packed mixed salad greens
  • 1 tomato, sliced
  • 1 mini cucumber, sliced
  • 2 tbsps diced cheddar cheese
  • 1/4 apple, sliced
  • 1 hard boiled egg, sliced
  • 1/4 cup smoked candied salmon
  • 1 tbsp sunflower seeds
  • 2 tbsps puffed quinoa
Hot mustard dressing
  • 1 small clove garlic, grated
  • 1/4 tsp hot mustard
  • 1 tsp mayo
  • 2 tsps red wine vinegar
  • 1 tbsp extra virgin olive oil
  • salt and pepper to taste
Instructions

Fill a small saucepan with water, bring to a boil, gently drop in an egg and boil for 9 minutes. When done, remove to an ice bath and then peel. Slice for the salad.
In a small bowl, whisk together the dressing ingredients. Set aside.
In a serving bowl, add in the mixed greens. Arrange the rest of the ingredients on top. Drizzle the dressing over and toss. Enjoy!
Tips
  • Would be fantastic with avocado as well. The creaminess is delicious and a welcomed addition.
