Graham Cracker Toffee

I make this toffee every year for the holidays and it never disappoints. If you are intimidated making toffee this is definitely the recipe for you. First you line up the graham crackers on a parchment or foil lined baking sheet. You will have to break some to make it all fit together. Then you combine your butter, brown sugar and salt in a pan on the stove and bring it to a boil. Boil it at a medium high heat for four to five minutes. You will feel it getting thicker. You have to stir it constantly. When it is ready it will get almost foamy and lighter colored. After it has thickened just a bit on the stove pour it over the graham crackers and put it in the oven for about 7 minutes. Take it out of the oven and immediately pour the chocolate chips over the toffee and put it back in the oven for approximately two minutes. You will see the chocolate chips get glossy. Take it out and spread out the chocolate. Wait for it to cool and harden before breaking into pieces.

I added some red glitter for a seasonal touch.

Line up your crackers as best as you can on the pan.

Combine the brown sugar and butter and salt in a pan.

After the toffee has baked and the chocolate chips go on.

After it has cooled and I broke it into pieces.

Ingredients
Toffee
  • Approximately 10 graham crackers, broken in pieces.
  • 1 Cup unsalted butter
  • 1/2 t salt
  • 2 C semi sweet chocolate chips
Instructions

Heat oven to 350 degrees
Arrange graham crackers on a baking sheet covered in parchment.
In a medium sauce pan heat the butter, brown sugar and salt to boiling.
Boil for approximately 5 minutes or until foamy and slightly thickened.
Pour over graham crackers.
Bake for seven minutes take out of oven.
Add chocolate chips on top.
Bake for two minutes more.
Spread chocolate chips to cover toffee.
Cool and break into pieces after hardened,
Tips
  • You can add toffee chips on top.
  • Milk chocolate chips are good on these as well.
