The recipe for this week is the curry couscous salad. Easy and tasty recipe packed with bold flavors and fresh ingredients. A simple combination of veggies to create a fresh and tasty salad to enjoy with moroccan meatballs.


Here are the simple ingredients:

1 cup of cooked Couscous

1 Tsp of curry powder

Salt and pepper to taste

Extra virgin olive oil

lemon juice

1/4 cup of golden raisins

2 green onions

10 leaves of fresh mint

2 Tbsp of chopped parsley

1/4 cup of tasted almonds

1/2 cup of chopped tomatoes

Using a good mediterranean oil is the key to this recipe to elevate the flavors.

Fluffy couscous cooked in water, curry and spices.

Simply add all the ingredients in a bowl and add the simple lemon + extra virgin olive oil, salt, pepper and curry powder.

Ingredients

  • 1 cup of cooked Couscous
  • 1 Tsp of curry powder
  • 1/4 tsp of garlic powder
  • 1/4 tsp of turmeric powder
  • Salt and pepper to taste
  • Extra virgin olive oil
  • lemon juice
  • 1/4 cup of golden raisins
  • 2 green onions
  • 10 leaves of fresh mint
  • 2 Tbsp of chopped parsley
  • 1/4 cup of tasted almonds
  • 1/2 cup of chopped tomatoes
Instructions

First cook the couscous as per packet instructions, the key is to add flavor to this first part of the recipe. So, season with salt, pepper and 1/4 tsp of curry powder, 1/4 tsp of garlic powder, 1/4 tsp of turmeric powder.
Once cooked, fluff and set aside.
In a bowl mix, extra virgin olive oil, lemon juice, salt, pepper and 1.4 tsp of curry powder.
In a large bowl, add the couscous, the raisins, toasted almonds, chopped mint, chopped parsley, chopped green onions and the dressing. Mix well and enjoy by itself or with moroccan meatballs.

  • Substitute the couscous for quinoa if you like.
