Curry Couscous Salad

The recipe for this week is the curry couscous salad. Easy and tasty recipe packed with bold flavors and fresh ingredients. A simple combination of veggies to create a fresh and tasty salad to enjoy with moroccan meatballs.
Here are the simple ingredients:
1 cup of cooked Couscous
1 Tsp of curry powder
Salt and pepper to taste
Extra virgin olive oil
lemon juice
1/4 cup of golden raisins
2 green onions
10 leaves of fresh mint
2 Tbsp of chopped parsley
1/4 cup of tasted almonds
1/2 cup of chopped tomatoes
Using a good mediterranean oil is the key to this recipe to elevate the flavors.
Fluffy couscous cooked in water, curry and spices.
Simply add all the ingredients in a bowl and add the simple lemon + extra virgin olive oil, salt, pepper and curry powder.

Ingredients
- 1 cup of cooked Couscous
- 1 Tsp of curry powder
- 1/4 tsp of garlic powder
- 1/4 tsp of turmeric powder
- Salt and pepper to taste
- Extra virgin olive oil
- lemon juice
- 1/4 cup of golden raisins
- 2 green onions
- 10 leaves of fresh mint
- 2 Tbsp of chopped parsley
- 1/4 cup of tasted almonds
- 1/2 cup of chopped tomatoes
Instructions
- First cook the couscous as per packet instructions, the key is to add flavor to this first part of the recipe. So, season with salt, pepper and 1/4 tsp of curry powder, 1/4 tsp of garlic powder, 1/4 tsp of turmeric powder.
- Once cooked, fluff and set aside.
- In a bowl mix, extra virgin olive oil, lemon juice, salt, pepper and 1.4 tsp of curry powder.
- In a large bowl, add the couscous, the raisins, toasted almonds, chopped mint, chopped parsley, chopped green onions and the dressing. Mix well and enjoy by itself or with moroccan meatballs.

Tips
- Substitute the couscous for quinoa if you like.
