Cranberry Fruit Salad has the great flavor of cranberry, combined with pineapple, mandarin oranges and creamy whipping cream. It is a perfect holiday salad. It is perfect for Thanksgiving or Christmas. We like to buy extra bags of fresh cranberries during the holiday season and freeze them to use whenever we want. They freeze well and we can have our favorite foods, made with cranberry, all year long. With only seven ingredients, this salad is not too expensive and it is easy to make. Ingredients

  • 14 ounce can whole cranberry sauce
  • 20 ounce can pineapple tidbits drained well
  • 11 ounce can mandarin oranges drained well
  • 3/4 cup frozen whole cranberries thawed (or fresh)
  • 2 1/2 cups heavy whipping cream
  • 1/2 cup sugar
  • 1 1/2 tsp vanilla
Instructions

Thaw cranberries and set aside.
In a mixing bowl with an electric mixer, beat whipping cream, sugar, and vanilla, on medium to high speed for 7-8 minutes. Whipping cream needs to be thick-peaks should form.
Stir the whole cranberry sauce and then fold into the whipping cream.
Drain the pineapple and mandarin oranges well.
Fold in drained pineapple, mandarin oranges, and thawed whole cranberries.
Refrigerate to chill for 2-3 hours or longer.
