I don’t know about you, but when the temperatures are chilly in the northeast, I make soup at least once a week.


It feeds a crowd and stores well in the fridge.


Sometimes I lean towards comforting soups like this chicken soup homemade recipe.

Tomato soup is very high in nutrition that is rich in antioxidants and may have cancer fighting properties.


It also improves bone health, boosts immunity, and promotes strong vision and healthy skin.


And if that’s not enough?


A good bowl of tomato soup may even reduce the risk of heart disease.

Is Cream of Tomato Soup Healthy?

The answer is…yes.


With the additional cream, whether you go with full heavy cream or one with less fat, adds more calcium and vitamin D to the dish.

What are the Disadvantages of Tomato Soup?

While there are lots of advantages to a good healthy bowl of tomato soup, sodium can be an issue for those keeping an eye on their salt intake.


However, this can be easily remedied by using low sodium chicken or vegtable broth in this recipe.

What Goes with Tomato Soup?

But my personal favorite is grilled cheese.

How Long Does Tomato Soup Last?

After making tomato soup, it lasts for about 3-4 days in the refrigerator.


But with this recipe?


It will probably be gone by then.


In addition to refrigeration, it can last for 6 months.


Place in an airtight container or freezer bags to help retain freshness.

One of the reasons I love this tomato soup recipe is it is super easy to make.


And if you know how I love easy dishes!


It’s pretty much a dump and go recipe.


There is very little preparation.

And it can be made with ingredients you have on hand.


Which makes it so much easier on those nights where you don’t know what to make, but want something hearty, healthy, and delicious.


The very little preparation that I do with this dish is all rough chop because its all going into a blender after roasting anyway.


So the onions are chopped to make it easier with a blender.


And the garlic cloves are removed from their outer shell but dropped into the roasting pan whole.


I mean, how easy is that???


But I have to admit something to you.


I eyeball most of this recipe, so feel free to make adjustments to the cream, balsamic, salt and pepper used in this recipe.

If you have an emersion blender, it makes it so much easier to make this dish.


I did not have an emersion blender until recently, so I was doing a lot of pouring.


THIS emersion blender is life changing.


If you make a soup that requires blending, you have to get one like THIS one.

But that’s not all.


The addition of balsamic vinegar adds another level of flavor to the soup.


And feel free to use whatever kind of broth you want to use.


I gravitate to chicken, but vegetable or beef stock works well too.

Ingredients

  • 2 28 oz Cans of Whole Peeled Tomatoes
  • 5 Cloves Garlic, Casing Removed
  • 1 Large Onion, Rough Chop
  • 2 Tablespoon Balsamic Vinegar
  • 1/4-1/2 Cup Heavy Cream or Half 'n Half
  • Salt and Pepper to taste
  • 1 48 oz beef, chicken, or vegetable stock
Instructions

Preheat oven to 500 degrees.
In a roasting pan, add onion, garlic, tomatoes, stock, balsamic vinegar, salt and pepper.
Pop it into the oven and roast for 45-50 minutes. Keep an eye on it towards the end of the time so it doesn't burn.
Remove from the oven and pour into a large stock pot.
Add heavy cream or Half 'n Half.
Blend until smooth with emersion blender. If you don't have one, you'll need to CAREFULLY blend in a blender. The liquid will be hot so be careful.
Heat on medium for 5-10 minutes to warm up the cream in the soup.
Serve immediately in bowls.
Sprinkle shaved parmesan or shredded mozzarella on top.
Garnish with fresh basil or parsley.
