Split Pea Soup

I used to hate split pea soup until I tasted this recipe. Its so simple to make and makes an excellent starter or I will just eat a big bowl as the main course, its that good.

Start with 1 large onion

Dice it fine

Add to a large pot with some oil

Saute over medium heat until almost golden brown. Toss in your chopped garlic and finish sauteing until golden brown.

Rinse dried peas under cold water. When your onion and garlic are sauteed, add your water, salt, pepper and peas to the pot. Let it boil for 1 hour.

While your soup is cooking, finely chop a bunch of fresh coriander.

After the hour is up, throw the coriander in and cook for an additional 30 minutes. After the peas are soft I like to blend with an immersion blender to get a cohesive thick soup, but if you like it piecey then don't blend it.

While the soup is finishing cooking, chop your sausage into circles and throw under the broiler for 5 minutes.

Serve with the sausage and fresh coriander for additional garnish.

Chop sausage into thin circles
Broil for 5 minutes at a high temperature
Tips
  • For some extra crunch, cut some bread into little cubes and drizzle with oil, salt, pepper, and garlic powder and bake in the oven until crispy for some delicious croutons
