Ingredients

  • 2 onions, sliced
  • 6 medium potatoes, with skin
  • 6 leeks, sliced
  • 6 cloves of garlic
  • 10 cups vegetable broth (approximately 2.4 liters)
  • 4-6 tablespoons cream cheese or 2/3 cup (150ml) milk
  • Salt, to taste
Instructions

Place everything in a slow cooker, except the cheese (if using milk, it can be added immediately), and add salt.
Cook on high for 2½-3 hours.
Blend the mixture, and add cheese if using.
Serve right away.

  • You can just serve is like this, or swirl some flavoured olive oil and a sprinkling of chives on top.
