Ingredients
- 2 onions, sliced
- 6 medium potatoes, with skin
- 6 leeks, sliced
- 6 cloves of garlic
- 10 cups vegetable broth (approximately 2.4 liters)
- 4-6 tablespoons cream cheese or 2/3 cup (150ml) milk
- Salt, to taste
Instructions
- Place everything in a slow cooker, except the cheese (if using milk, it can be added immediately), and add salt.
- Cook on high for 2½-3 hours.
- Blend the mixture, and add cheese if using.
- Serve right away.
Tips
- You can just serve is like this, or swirl some flavoured olive oil and a sprinkling of chives on top.
