Delicious Zucchini White Chili Recipe

Chili is one of our weeknight go to meals. But, this white chili is even better because it has veggies in it. No need for any other dish to accompany this comfort food dinner. This chili recipe is a little lighter than the traditional chili recipes because it uses ground turkey. It can also be made with ground chicken.

These are all the ingredients we used. Cutting them up before hand made it easy when we were ready to cook. It helped to keep them near where my dutch oven was going to be so I could cook this dish quickly.

Add garlic to olive oil heat for a minute to a dutch oven or deep large saucepan. Be sure the temperature is lower before adding the green chili. It will make a mess. Then, add the can of green chili slowly to the saucepan for a few minutes or until heated through. Now, it's time for the other ingredients. add ground turkey, onions, and garlic and brown. Break up the meat and stir.

Add the rest of the ingredients (cannelloni beans, chicken broth, cumin, salt, pepper(if you want) to the saucepan and stir. Cook for 10 minutes. Then, add the zucchini and stir in for another 10 minutes.

Add the flour and stir into the chili and cook for 5 minutes or until the broth is thicker.Remove from heat and serve with Tortilla chips, salsa, and shredded cheese.

Here's another finished picture a little closer so you can see that the zucchinis are very lightly cooked.
