This lentil soup recipe has been my family's favorite, and when I finally learned to switch out regular diced tomatoes for fire roasted diced tomatoes, it was a game changer.


Lentils are a great source of protein and fiber, making this soup a hearty option if you want to meal prep for a busy week. I love switching around my proteins to make sure I get a variety in my diet, and I'm always excited when lentils come on rotation. It's a great meat replacement for many recipes if you're don't eat meat or are looking to eat less red meat.

Ingredients

  • 1 1/2 cup red lentils, rinsed
  • 16 oz can of fire roasted diced tomatoes
  • 16 oz can of crusted tomatoes
  • 3 garlic cloves, minced
  • 2 yellow onions, diced
  • 1 celery bunch
  • 2 large carrots, diced
  • 4 cups chicken or vegetable broth
  • 3 tbsp avocado or olive oil
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp thyme
  • salt + pepper, to taste
  • chopped tuscan kale
Instructions

Sauté the onions, garlic, and spices with avocado oil in your instant pot for about 5 min.
Add the celery and carrots for 2 min.
Add the canned tomatoes, lentils, and chicken broth.
Cook on high pressure for 15 min.
Stir in the kale at the end.
Serve with bread.
