Slimming World Broccoli and Stilton Soup Recipe (Syn Free)

This delicious Slimming World broccoli and stilton soup cooks in a soup maker, pan, multicooker and slow cooker. It can also be Syn Free when using cheese as your Healthy Extra A.

Here is a deliciously naughty recipe which I adapted today in Slimming World fashion. It's a low syn broccoli and stilton blue cheese soup, but was inspired by 2 different recipes.


The first being Nigella Lawson's version, which to me, is usually guaranteed a success. And the 2nd, my normal go-to bbcgoodfood version which I have had on numerous occasions, but is quite 'safe', so fancied spicing it up for a change. So you could call it an amalgamation.


It is so deliciously cream, thick and more importantly, filling. I'm not a big fan of thin, watery soups. Only if the weather is hot. I'd rather for something bulkier like this or chunky veg to give my stomach something to break down when it's grumbling.

WHAT BLUE CHEESE CAN I USE?

For my recipe, I always use Laughing Cow Light cheese triangles with blue cheese. These are 1.5 syns each, or 6 as part of your healthy extra. And how many you use is up to you. We usually have 6-8, but it's easier if you have an easy amount to count as part of your allowances.


But, others you could use are:



  • 35g Tesco Danish Blue Cheese = 1 Healthy Extra or 6 syns
  • 25g Shropshire Blue Cheese or any regular stilton = 5 syns
  • 25g Co-op blue stilton = 5 syns
  • 25g Morissons British blue stilton = 5 syns
  • 25g Sainsburys blue stilton = 5 syns
  • 25g Marks & Spencer Mature British blue stilton = 5 syns
  • 25g Stilton blue = 5 syns


SOUP MAKER, DEEP PAN OR SLOW COOKER?

I make most of my soups in my Morphy Richards soup maker. It's obviously not essential to make my recipe, but anyone who owns one will know that there's a limit to what you can put in. So if I want to make a soup for 12 people, let's say, then I'd have to make it in several batches. However, they do make life much easier if I want to serve 4 people as a soup maker requires no baby sitting whatsoever.


But I originally struggled finding recipes with the right quantities and shelved it to collect dust after a few bad goes after following peoples' soup maker meals online.Then, after a cooler winter spell, I set myself on a mission to convert all the soup recipes I'd loved in the past to work for my soup maker which is why you'll find over 100 soup recipes around here.

HOW TO STORE SLIMMING WORLD BROCCOLI AND STILTON SOUP LEFTOVERS

One of my most frequent questions about my soups is, can I freeze this? Yes, absolutely! I freeze most of my soups and at one stage, had a freezer full of them (particularly around my 7 Day Soup Challenge).


It's recommended to free food for about a month, but to be honest, I've had no problems leaving mine in for about 3. I have a cupboard full of Sistema porridge bowls and soup mugs as they're safe in the dishwasher, microwave and freezer. Another tip I love from a reader is to line it with a food bag to freeze, then remove so you can reuse the mug. Or try running the bottom under a hot tap tor release to store elsewhere in your freezer so you can reuse it again.


Sometimes I heat up from frozen in the microwave or pan. And sometimes I defrost first.

LOW SYN SOUP TOPPINGS I LOVE

Sometimes it's the topping that's the show stopper that gives the ultimate flavour. And there are many I put together, depending what I have. On this occasion, I love syn free air fried wholemeal croutons as part of my Healthy Extra B. But here's a few others you could try:



  • Fresh herbs
  • Grated cheddar cheese using your Healthy Extra A
  • Crispy kale
  • Fresh parmesan grated on top (30g can be used as part of your Healthy Extra A
  • Seasoning

HOW TO MAKE SLIMMING WORLD BROCCOLI AND STILTON SOUP

INGREDIENTS - SERVES 4


  • Frylight


  • 450g broccoli florets usually 1 large or 1 & ½ broccolis


  • 8 Laughing Cow Light Blue Cheese triangles read notes above for Healthy Extra info


  • 100g onion, peeled & diced


  • 100g sliced leek, frozen is fine too


  • 1 celery stick, diced
  • 200g potato, peeled & diced
  • 700g or ml water
  • 2 vegetable or chicken stock cubes
  • 2 tsp dried thyme or leaves from a few stalks
  • ¼ tsp dried chilli flakes if you like a bit of heat
  • Seasoning


METHOD

Firstly, spray a large frying pan with Frylight or a deep based pan if you're not using a soup maker. Then add your diced onion and gently saute until softened so they caramelise.


Now add the remaining vegetables.

Before you pop the lid on, now add all your herbs and seasonings.

Continue to fry for further 10 minutes. Note, you'll need to shake the pan every now and then or lift the lid and stir briefly to prevent catching.

Then, depending on which way you're cooking your Slimming World broccoli and stilton soup, transfer the remaining ingredients in to your pot. This is excluding the cheese. Methods to cook are:



  • Soup makers: set to smooth
  • Slow cookers: cook on high for 3-4 hours or low for 6-7
  • Multicooker: set to about 7-10 minutes
  • Pan on hob: simmer for about 20-25 minutes until everything is tender.


Once cooked, add your cheese triangles and blend before serving.

Ingredients

  • Frylight cooking oil spray
  • 450 g broccoli florets between 1 and 2 broccolis
  • 8 triangles Laughing Cow Light Blue cheese
  • 100 g onion peeled & diced
  • 100 g Sliced leek
  • 1 celery diced
  • 200 g potato peeled & diced
  • 700 g or ml water
  • 2 vegetable or chicken stock cubes
  • 2 tsp dried thyme or leaves from a few stalks
  • ¼ tsp dried chilli if you like a touch of heat
Instructions

Firstly sauté the onions on low until soft in a pan that you can pop a lid on for stage 2.
Now add all of the veg, spices and seasoning, some more fry light and pop the lid on - continue cooking for 10 minutes, shaking occasionally.
Now add all of the ingredients (except the cheese triangles) and simmer until everything is cook, or add all to the soup maker and set on smooth.
Once everything is tender, add the triangles in and blend. Note, if you want to try and save on syns, halve the cheese quantity and blend and taste as you go along - you may find you don't need the extra syns.
Serve alone or with fresh herbs.To make croutons, I just use a 60g wholemeal roll as part of my Healthy Extra B and dice before spraying with frylight and toasting in my airfryer for about 5 minutes.

  • 6 Laughing Cow Light Blue Cheese triangles counts as your Healthy Extra.

    Love this soup.

  • Until I read your post, I had no idea there were "soup makers" - so I Googled. Very cute! I cook for 9 adults, but even when I cooked just for myself, I wanted leftovers for lunch or dinner on a another day. So you are now responsible for my "learning something new today!" ☺ Adore broccoli soup. Will modify slightly as I don't use any spray oils. Also make my own broth and stock so have on hand most of the time. Like Laughing Cow products, but finding the light blue cheese is an Easter egg hunt, I can sub with some decent bleu for a similar price easily. Rest will stay the same. Will measure in ounces to grams as "4 people" is rather vague, again cooking for 9, will double the recipe and see how we do. Thanks for sharing!
