A cozy classic: tomato soup paired with grilled cheese, best eaten on a colder, gloomy day. This recipe is a perfect example of working with what you have in your kitchen around time constraints. Let's be honest, we don't always have time to roast tomatoes and garlic in the oven for the perfect tomato soup (even though that sounds incredibly delicious). You don't even need whole tomatoes for this recipe if you don't have any, which is great when you need to throw something together. I recommend giving this one a try on a day where you just need something really comforting, really fast.

Ingredients

  • 1 Tbs vegetable oil
  • 1 Small onion, diced
  • 1-2 Cloves of garlic, crushed
  • 1 Tbs dried basil
  • 1 Tbs tomato paste
  • 1 Tbs flour
  • 1 46-oz Can of tomato juice
  • 2 Tsp chicken bouillon
  • 1/4 Cup water
  • Pinch of sugar
  • Salt and pepper, to taste
Instructions

Sauté onions in vegetable oil until translucent/lightly golden, then add in crushed garlic and dried basil, toast for around 2 minutes until everything becomes fragrant.
Add in tomato paste. Once incorporated, add in flour and cook off for a couple of minutes until everything is combined and you can no longer see the flour.
Add in tomato juice, water, chicken bouillon, sugar and pepper, and bring to a boil.
Let simmer for 15-20 minutes, or until the soup begins to thicken.
Tips
  • Italian seasoning and thyme also work really well in this if you have them on hand.
