How to make weight watchers friendly taco soup


Fry onions and green peppers in olive oil over medium heat in a large pot. Once tender, add in garlic and jalapeno peppers, then add ground turkey broken into pieces with a wooden spoon until its brown.

Add in the chilli powder, cumin, paprika, onion powder and oregano in the pot until you can the spices are fragrant and excess is liquid is evaporated.

Add the chicken broth and tomatoes and bring it to a boil once then simmer for about half hour. Skim any fat off the top using a shallow ladle spoon. Add the refried beans and corn and heat it 5 minutes, then remove form heat.

Serve with your favorite taco toppings in bowls.

Ingredients

  • Olive oil- 1 tsp
  • Uncooked onion -1 medium, yellow, chopped
  • Uncooked bell pepper -1 medium, green, chopped
  • Garlic clove -4 clove(s), finely chopped
  • Jalapeño pepper- 1 medium, seeded and finely chopped
  • Chili powder - 1 Tbsp
  • Ground cumin-1 tsp
  • Smoked paprika -1 tsp
  • Ground oregano - 1 tsp
  • Canned diced tomatoes -29 oz, fire-roasted
  • Canned black beans - 15 oz, rinsed and drained
  • Uncooked 93% lean ground turkey - 12 oz
  • Frozen corn kernels -1 cup(s)
  • Canned chicken broth - 3 cup(s)
Instructions

Heat olive oil In a large pot over medium heat. Add onion and green peppers; cook, stirring occasionally, until vegetables are tender and soft, about 5 minutes.
Add garlic and jalapeno, and continue cooking, stirring, for about 2 minutes. Add ground turkey, and cook, breaking up any large pieces with a wooden spoon, until no longer pink, 3 to 4 minutes.
Stir in chili powder, cumin, paprika, oregano, onion powder,  and cook, stirring until spices are fragrant and any remaining liquid is absorbed, about 1 minute.
Add broth and tomatoes; bring to a boil, reduce to a simmer, and cook until flavors marry, about 30 minutes.
Using a shallow ladle or wide spoon, skim off any  fat on the top. Add in beans and corn, and heat through, another 5 minutes.
Remove from heat. Ladle soup into bowls, and garnish each bowl with your favorite taco toppings.
