Left Over Turkey After Thanksgiving (Turkey and Wild Rice Soup)

What do you do with left over turkey after Thanksgiving? We all love turkey but how much left overs can you really eat!? Plus my family are bad with left overs. I guess part of the problem of having abundance is getting "bored" of eating the same thing every night. Instead make a heart soup!

I started by tearing the turkey into small chunks.

I place the turkey with 2 celery stalks and a cup of baby carrots with 1 cup broth (I dont think it matters which kind, I actually like the miso ginger chicken broth from Trader Joes), and 1 cup water. Simmer for 20 minutes so that the carrots cook.

Add 1/2 cup of rice and simmer for 30 minutes until the rice is tender.

I know mashed potatoes are a Thanksgiving staple but we usually have roasted potatoes instead so I threw this into the mix as well.

Since they are already cooked, you want to add them towards the end overwise they will become too soft.

My family was happy to have something "new" for dinner even though I just upcycled the left overs!

Since most of the food is already seasoned, you don't need to add any additional seasoning.

Ingredients

  • 1 cup shredded turkey
  • 1 cup broth
  • 1 cup water
  • 1 cup of carrots
  • 2 celery stalks
  • 1/2 cup rice
  • 1/2 cup potatoes
Instructions

shred turkey
place in pot with broth water, celery and carrots and cook for 20 minutes
add the rice and cook another 30 minutes
add cooked potatoes (optional)
